They’re easy to prepare, and the classic flavor combination of butter, garlic, and fresh dill is so satisfying. This recipe is also very forgiving. It’s easy to customize; you can adjust the seasoning to your liking and add different herbs or spices to suit your style.

What to Serve with Roasted Dill Potatoes

Here are a few suggestions:

  • Grilled or roasted entrees such as Grilled Polenta, Grilled BBQ Tofu, or Cauliflower Steak
  • Vegetables such as Skillet Broccoli, carrots, or Pan-Fried Asparagus

Ingredients for Roasted Dill Potatoes

You will need:

  • 2 pounds baby potatoes, cut into halved or quarters
  • 2 tablespoons olive oil
  • 2 tablespoons vegan butter
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup fresh dill.

Ingredient Notes

  • Baby Potatoes – Skin-on baby potatoes are a good choice for roasting because they cook quickly and evenly, and their small size means that they have a higher skin-to-flesh ratio, which creates a crispy texture. In contrast, larger potatoes such as Russets, with their higher starch content, are better suited for baking or mashing.
  • Olive Oil – Preferred for its light flavor, olive oil helps to create a crispy exterior and prevents the potatoes from sticking to the pan.
  • Vegan Butter – Adds rich and savory flavor while also helping to create a crispy exterior.
  • Lemon Juice – Adds a bright and tangy flavor that complements the richness of the potatoes and other seasonings.
  • Garlic – For this recipe, fresh garlic is best! Garlic powder is not recommended.
  • Salt and Ground Black Pepper – The amounts given are guidelines. Adjust to suit your personal taste or dietary restrictions.
  • Fresh Dill – Please use fresh dill for this recipe! It enhances the natural earthiness of the potatoes and adds a bright and herbaceous note to the dish that you just won’t get with dried dill.

How to Make Roasted Dill Potatoes
