I like this recipe because all you need is fresh broccoli and a few very simple ingredients. There are no complicated steps involved or fancy equipment needed – just a large skillet with a lid and a spatula to move the broccoli around as needed.

Ingredients for Skillet Broccoli with Garlic

Here’s what you’ll need. Exact amounts are in the recipe card below.

  • Olive Oil – The mild flavor and high heat tolerance make it a good choice for searing broccoli without burning. Avocado oil also works well.
  • Broccoli Florets – Fresh is best. Frozen broccoli, even when thawed, won’t achieve the crisp-tender texture this method aims for because of the extra moisture it retains.
  • Salt – The amount in the recipe card is a guide. Adjust to taste or dietary need.
  • Water – Added after the initial sear to steam the broccoli through without competing with the broccoli’s flavor. Vegetable broth works too if you want a little more depth.
  • Garlic – Stirred in at the end so it doesn’t burn. Fresh garlic elevates this simple dish without overpowering the broccoli.

How to Make Broccoli with Garlic

STEP ONE: Sear the Broccoli. Set a large, deep skillet over medium-high heat and add the olive oil. When the oil is hot, add the broccoli florets in an even layer. Sprinkle with salt. Cook without stirring for 2 minutes, until the broccoli begins to lightly brown in places.

STEP TWO: Steam. Add the water and cover. Continue cooking for 2 more minutes, until the broccoli is steamed through and bright green.

STEP THREE: Add the Garlic. Remove the lid and stir in the garlic. Continue cooking for an additional 30 seconds, then remove from heat and serve hot.

Frequently Asked Questions

Why cook without stirring at first?

Those first two minutes of undisturbed cooking are what create the light browning on the broccoli. Stirring too soon prevents that from developing. Let it sit and resist the urge to move it around.

Can I add other seasonings?

Yes. Red pepper flakes, lemon zest, or a splash of soy sauce all work well. Add them with the garlic at the end. A squeeze of lemon juice just before serving is a particularly good addition.

Can I make this with other vegetables?

Yes. The same method works well with asparagus, green beans, or broccolini. Adjust cooking time slightly depending on thickness.

Can I use frozen broccoli?

No. Frozen broccoli won’t work well for this method. The freezing process breaks down the cell structure, so even fully thawed frozen broccoli holds extra moisture that prevents it from searing properly. Instead of browning in the pan, it steams and turns soft. If frozen is all you have, a different method — roasting in the oven at high heat after patting it very dry — will give you better results.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet over medium heat with a small drizzle of olive oil to restore some texture. The microwave works, but the broccoli will soften.
