Spinach Parmesan Balls ~

An easy and savory, crowd-pleasing appetizer made with all plant-based ingredients!

Simple pantry and freezer ingredients are combined with a ground flaxseed mixture to bind, then rolled into bite-size portions and baked until lightly crispy on the outside while staying tender on the inside.

These savory bites are big on flavor and easy to make ahead. They can even be frozen for another time. Just reheat in the oven or microwave and you’re good to go!

What to serve with Spinach Parmesan Balls:

I like to eat them as a quick handheld snack or serve as an appetizer with a side of Easy Classic Marinara Sauce for dipping.

You could also toss them in a salad or serve as a vegan meatball with Garlic Spaghetti. Yum!

Spinach Parmesan Balls ~ An easy, crowd-pleasing appetizer made with all plant-based ingredients!

Ingredients and substitutions:

  • ground flaxseed – Whole flaxseed will not work as well; it needs to be ground.
  • water
  • frozen spinach
  • seasoned bread crumbs – Check the label to make sure it’s dairy-free! I like Whole Foods 365 brand.
  • vegan Parmesan cheese
  • vegan butter
  • yellow onion – Red onion will also work.
  • garlic

How to make Spinach Parmesan Balls:

Preheat oven to 350 degrees F.

Make flax binder. In a small mixing bowl, whisk together the ground flaxseed and water. Set aside.

Combine ingredients. Into a medium-size mixing bowl, add the thawed and well-drained spinach, seasoned bread crumbs, Parmesan cheese, butter, yellow onion, garlic, and flaxseed mixture. Stir to combine.

Roll into balls. Using your hands or a cookie scoop, shape the mixture into 1-inch balls. Onto a large baking sheet, arrange the balls in a single layer.

Bake. Set in the preheated oven to bake for 20-25 minutes, until lightly browned and firm to the touch. Allow to cool 5 minutes before serving.

Serve. Warm or room temperature.

Ingredients

  • 1/4 cup ground flaxseed
  • 1/2 cup + 2 tablespoons water
  • 16 ounces frozen chopped spinach thawed and drained
  • 1 1/2 cups seasoned bread crumbs.
  • 1 cup vegan Parmesan cheese grated
  • 1/2 cup + 2 tablespoons vegan butter melted
  • 1/4 cup yellow onion finely diced
  • 3 cloves garlic minced
