Sheet Pan Hash Browns Recipe
I like this recipe because it makes cooking a bag of frozen hash browns a snap.
I’ve always enjoyed the convenience of prepackaged hash browns. However, my track record of success with cooking them in a skillet on the stove has been mediocre at best. I constantly struggled with getting them cooked evenly; there would always be a few undercooked areas, usually right next to the extra crisp pieces. And as anyone who has ever prepared shredded hash browns knows, there is a fine line between crispy and burnt.
The best way to get evenly cooked and perfectly crispy hash browns every time is simply to get them off the stovetop and into the oven.
Quick Tip for Success
- For best results, line your baking sheet with parchment paper. My experience has been that hash browns will stick to aluminum foil. And silicone baking mats, while economical to use, will not yield the same crispy potatoes we’re after in this recipe.
Ingredients for Oven Hash Browns
- Frozen Hash Browns – Use shredded frozen hash browns that can be easily separated; they don’t need to be fully thawed, but avoid clumps so they’ll spread evenly across the pan. Give them a quick toss with your hands or a fork if they’re sticking together.
- Butter – Melted butter coats the potatoes for even browning and helps them crisp up in the oven. It also adds a little richness without overpowering the dish.
- Yellow Onion – Chopped onion cooks down slightly in the oven and adds a subtle sweetness that works well with the crispy edges of the hash browns.
- Seasonings (Salt, Black Pepper, Garlic Powder) – This simple mix brings out the flavor of the potatoes without complicating the recipe. You can always adjust to taste once everything’s mixed together.
How to Cook Hash Browns in the Oven
STEP ONE: Prep the oven.
Preheat the oven to 400°F. Line a half-sheet pan with parchment paper for easy cleanup and even browning.
STEP TWO: Mix the hash browns.
In a large bowl, combine the frozen hash browns and chopped onion. Drizzle with melted butter and toss until everything is evenly coated.
STEP THREE: Season.
In a small bowl, stir together the salt, pepper, and garlic powder. Sprinkle the seasoning over the hash browns and toss again to mix well.
STEP FOUR: Spread and bake.
Transfer the mixture to the prepared baking sheet and spread into an even layer. Bake for about 45 minutes, or until the edges are crisp and the top is golden. No flipping needed.
STEP FIVE: Serve.
Serve hot, straight from the oven.

Thanks for your kind words! 🥰 It’s difficult to provide specific instructions for your sheet pan meal idea since the temperature for the sausage patties may be different than for the hash browns and the cooking time may also be different. My recommendation is to split the difference with the oven temperature. For example, if the hash browns are 400° and the sausages are, say 350°, maybe try 375° and keep an eye on things. Sorry I’m not able to offer more specific guidance.

Hi I have a question…..pouring the melted butter over the frozen hash browns, wouldn’t it stick right in where poured and freeze? Should I thaw the hash browns before pouring melted butter and tossing?

Hi Debbie ~ I get what you’re saying but have not had any issue with pouring the butter over frozen hash browns. My concern with letting the hash browns thaw first is that it could affect the cooking time so you would need to keep a closer eye on them in the oven. I hope this is helpful!

Turned out pretty good. Stuck to the parchment paper. I added a little more butter at the end and then broiled on low for a few minutes. I also made a batch in the skillet at the same time to see which was better. I think this baked one was better! Thanks.

Can I shred potatoes and use them? Have alot of potatoes to use up and wonder if this could work for them. How would the temperature and time change for cooking them?

Hi Erica ~ Yes, you can use fresh shredded potatoes for this recipe! After shredding, place the potatoes in a kitchen towel and squeeze out as much water as possible so that you don’t end up with soggy hash browns from the excess moisture then proceed with the recipe. Freshly shredded potatoes may also need a bit longer to cook compared to frozen hash browns but the temperature can stay at 400°F. You’ll know they’re done when they’re golden brown and crispy on the edges. I hope this is helpful!

Great recipe for basic hashbrowns without all the extra fluff. I did three batches for a party using the 32 oz frozen hashbrown bags thawed. So obviously upped the ingredients accordingly. I did add a little onion powder since I’m an onion fan but didn’t over do it because some people don’t tolerate them well. Plus I put out a bowlss of sauteed onions (in olive oil) and a bowl of hand shredded cheese. Yum!
