- Vegan Butter – Used in two stages for browning the steak bites and building the gravy base.
- Vegan Steak Bites – Use your favorite store-bought variety. Seitan is a great option too!
- All-Purpose Flour – This is what gives the gravy its classic, thick, rich consistency.
- Yellow Onion – Builds a savory, aromatic base for the gravy. Dice it nice and small so it melts right into the sauce.
- Fresh Garlic – Added after the onion for a deeper, more rounded flavor.
- Vegan Beef-Style Broth – The backbone of the gravy. Better Than Bouillon’s No-Beef Base is a favorite around here and widely available.
- Vegan Worcestershire Sauce – Adds depth and a subtle tang that makes the gravy taste rich and complex. The Wizard’s brand is a good one.
- Soy Sauce – Brings a savory, umami depth to the gravy.
- Kosher Salt and Ground Black Pepper – Add to taste at the end. Between the broth, Worcestershire, and tamari, you may find you need very little.
Can I add vegetables to this dish?
Absolutely! Sliced mushrooms, baby bella mushrooms, or diced carrots are all wonderful additions. Add them along with the onion in step 2.
How to Make Vegan Beef Tips and Gravy
STEP ONE: Brown the Steak Bites. Set a large deep skillet over medium heat and add 1 tablespoon of butter. When the butter is melted, add the steak bites and cook for 5 minutes, turning frequently until browned on all sides. Remove from the skillet and set aside. Do not wipe out the skillet: those browned bits add flavor to the gravy.
STEP TWO: Soften the Onion. Add the remaining tablespoon of vegan butter to the skillet. When melted, add the chopped onion and cook for 3 minutes until softened.
STEP THREE: Build the Gravy Base. Stir in the flour and cook for 2 minutes, then add the garlic and cook for 1 minute more. Cooking the flour first removes the raw taste and gives the gravy a rich, smooth consistency.
STEP FOUR: Add the Liquids. Whisk in the beef-style broth, Worcestershire sauce, and soy sauce until smooth.
STEP FIVE: Simmer. Return the steak bites to the skillet and stir to coat. Bring to a boil, then reduce to a simmer. Cover with the lid slightly ajar, leaving a little space for steam to escape, and simmer for 30 minutes, stirring every 5 minutes, until the gravy is rich and thick.
STEP SIX: Finish and Serve. Adjust seasoning to taste and serve hot over mashed potatoes, rice, or pasta.
Tips for the Best Vegan Beef Tips and Gravy
- Don’t wipe out the skillet after browning the steak bites. Those caramelized bits on the bottom of the pan add real depth to the gravy.
- Cook the flour for the full 2 minutes before adding liquid. This eliminates any raw flour taste and ensures a smooth, rich gravy.
- Stir every 5 minutes during the simmer. The gravy is thick and will stick to the bottom of the pan if left unattended.
- Season at the end. Between the broth, Worcestershire, and tamari, you may find adding more seasoning is not necessary.

Storage and Reheating
- Leftovers keep well in an airtight container in the refrigerator. Reheat on the stovetop over low heat with a small splash of broth or water to loosen the gravy.
- For longer storage, freeze for up to 3 months and thaw overnight in the refrigerator before reheating.

This turned out excellent! I didn’t have all of the ingredients…. So did a few substitutions 🙂 For the broth, I used a cup and a 1/2 of water, half a cup of Is dry red wine, a teaspoon of the Better than Bouillon No Chicken base, and a teaspoon of the a vegetable base. Also added some Portobello mushrooms. My husband, who is not a vegetarian, said this could compete with any of the meat versions he has had! Thank you Holly! Great recipe!
