Fresh and Flavorful

I like this recipe because it combines fresh herbs and simple seasonings with the crisp, refreshing taste of cucumbers. The cream cheese spread, flavored with dill and parsley, adds a bright earthiness that pairs perfectly with the soft whole wheat bread and crunchy cucumbers. This recipe is easy to prepare and always a crowd-pleaser that can be served cut in half for lunch or into quarters for cucumber tea sandwiches. Little sandwiches are always one of the most popular finger foods at an afternoon tea party, baby shower, or bridal shower.

Ingredients for Garden Herb Cucumber Sandwiches

You will need the following:

  • 8 ounces plain cream cheese, room temperature
  • ​1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon seasoned salt
  • 4 slices whole wheat sandwich bread 
  • 1 cup English cucumber, cut into thin slices and patted dry

Ingredient Notes

  • Cream Cheese – For vegan cucumber sandwiches, use dairy-free cream cheese. Regular cream cheese is all you need, but if you want to use flavored cream cheese, scallion-flavored is a good choice 
  • Fresh Herbs – Fresh dill and parsley add a bright earthiness and enhance the fresh flavor of the sandwiches.
  • Ground Black Pepper – Adds subtle spice to the creamy cheese and fresh herbs. 
  • Seasoned Salt –  A blend of salt, garlic powder, onion powder, and other spices that enhance the overall flavor of the cream cheese spread.
  • Whole Wheat Bread – I Iike to use a grainy soft bread for these sandwiches. Soft white bread is also a good option for a classic cucumber tea sandwich.    
  • Fresh Cucumbers – I use English cucumbers for this recipe because they have small seeds and less excess water compared to regular cucumbers.      hot house cucumbers

How to Make Garden Herb Cucumber Sandwiches

STEP ONE: Prepare the Cream Cheese Spread. In a medium bowl, stir together the cream cheese, parsley, dill, black pepper, and seasoned salt. Adjust seasoning to taste and set aside.

STEP TWO: Spread the Bread. Place the slices of bread onto a cutting board. Generously spread each slice of bread with the cream cheese mixture. 

STEP THREE: Add the Cucumbers. Arrange the cucumber slices over 2 slices of bread to cover the cream cheese spread. 

STEP FOUR: Assemble the Sandwiches. Top with the remaining bread slices, cream cheese side down. 

STEP FIVE: Cut and Serve. Use a serrated knife to cut into halves or quarters and serve immediately.

Tips for Making the Best Cucumber Sandwiches

  • Room Temperature Cream Cheese: Let the cream cheese sit out until it has fully come to room temperature. If it is cool, it will be too thick to easily stir in the herbs and seasonings. 
  • Uniform Slices: Use a mandoline for perfectly thin and uniform cucumber slices.
  • Remove Excess Moisture: Use a kitchen towel or paper towels to pat the cucumber slices dry. 
  • Clean Cuts: Use a serrated bread knife to cut through the sandwiches cleanly and easily.

FAQ

  • Can these sandwiches be made ahead? Partially. These easy cucumber sandwiches are best served right away after they are assembled. However, the cream cheese spread can be made a day ahead and stored in the refrigerator in an airtight container or small bowl covered with plastic wrap. 
  • Can I use dried herbs? Yes, but fresh herbs provide the best flavor. Use 1 tablespoon of dried herbs for each 1/4 cup of fresh herbs.
