Crunchy, zesty, and bursting with freshness. This easy-to-make dish combines crunchy cabbage with the peppery kick of radishes, all tossed in a creamy cilantro lime dressing for a savory and tangy slaw.
I like this easy coleslaw recipe because it’s a simple side dish that offers a fresh take on traditional coleslaw. It’s quick to make and one of the easiest ways to add fresh flavor to a variety of Mexican food dishes!
This easy slaw is great for serving over tacos, tossed in burrito bowls, or on its own as a cabbage salad side dish with enchiladas.
Ingredients for Cilantro Lime Radish Slaw
You will need the following:
- 1 cup shredded coleslaw mix
- 1/2 cup radishes, cut into matchsticks
- 1/2 cup cilantro, chopped
- 1/2 cup scallions, chopped
- 2 tablespoons lime juice, divided
- 1 teaspoon lime zest
- 1 teaspoon olive oil
- 1/4 cup plain Greek-style yogurt
- Salt and ground black pepper, to taste
Ingredient Notes
- Coleslaw Mix – A blend of shredded cabbage and carrots provides a crisp and crunchy base for the slaw. For convenience, I use a bag of coleslaw mix made with green cabbage from the grocery store, but really, you could also slice up a head of cabbage, and that would work just fine; use green or red cabbage/purple cabbage, depending on the look you want.
- Radishes – Radishes add a light, peppery bite. You won’t need the whole bunch of radishes so save the rest for snacking raw or add them to a plate of fresh veggies with Homemade Ranch Dip.
- Cilantro – Fresh cilantro adds a bright, earthy flavor.
- Scallions (Green Onions): For a mild onion flavor.
- Lime Juice – Fresh lime juice adds a touch of citrus flavor. 1 fresh lime generally has about 2 tablespoons of juice.
- Lime Zest – Lime zest adds an extra punch of citrusy flavor and enhances the tanginess of the creamy dressing.
- Greek-Style Yogurt – I use the Kite Hill brand dairy-free yogurt.
How to Make Cilantro Lime Radish Slaw
STEP ONE: In a large bowl, toss together the coleslaw mix, radishes, cilantro, and scallions. Set aside.
STEP TWO: In a small bowl, whisk together 1 tablespoon of lime juice, lime zest, and olive oil. Pour over the coleslaw mixture and toss to coat.
STEP THREE: In the small bowl, stir together the yogurt and the remaining 1 tablespoon of lime juice. Season to taste with salt and ground black pepper.
STEP FOUR: Stir the yogurt mixture into the slaw mixture and toss to coat. Adjust the seasoning to taste, and serve cool or at room temperature.
Storage
- For the best texture, serve this tangy coleslaw on the same day. Leftover coleslaw can be stored in an airtight container in the refrigerator for up to 2-3 days. Before serving, give it a good stir to redistribute the dressing and refresh the flavors. Freezing is not recommended.
