Broccoli Cheese Dip ~
The crowd-pleasing combination of broccoli and cheese never goes out of style! This easy and flavorful dip is perfect for everything from laid-back movie nights to holiday dinner parties.
Serve with tortilla chips or thinly sliced baguette.
Baked Broccoli Dip Recipe
I like this recipe because it works with a variety of cheeses. For the dip pictured here, I used vegan mozzarella and Parmesan cheeses. Dairy-free cheddar or pepper jack cheese would also work well.
Quick Tip for Success
- One thing to remember as you’re chopping the broccoli for this recipe is you want to keep the pieces on the small side. I like to cut the florets into bite-size pieces and then cut those into halves or quarters again. A food processor is not recommended for this task because while it can make quick work of chopping the broccoli, it’s very easy to chop it too finely. We want to keep some texture to the dip.
Ingredients for Broccoli Cheese Dip
You will need:
- Non-stick baking spray
- 1 teaspoon olive oil
- 2 tablespoons yellow onion, chopped
- 1 teaspoon garlic, minced
- 8 ounces vegan cream cheese, softened
- 3/4 cup vegan mozzarella, shredded
- 1/2 cup vegan parmesan cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 pound fresh broccoli florets, chopped
How to Make Broccoli Cheese Dip
STEP ONE: Preheat the oven to 350°F. Spray a 1-quart baking dish with non-stick baking spray; set aside.
STEP TWO: Into a medium skillet over medium-high heat, add the olive oil. When the oil is hot, add onions and cook for 2 minutes, stirring frequently until softened. Add the garlic and continue cooking for an additional 30 seconds. Remove from heat and transfer to a medium-sized mixing bowl.
STEP THREE: Add the cream cheese, mozzarella, parmesan, salt, and pepper. Stir to combine and adjust seasoning to taste. Stir in the chopped broccoli.
STEP FOUR: Transfer the mixture to the prepared baking dish. Bake for 25 minutes, until the dip is heated through and the edges are lightly golden. Serve hot.
