Tetrazzini is one of those cozy, old-school casseroles that hits the spot when you’re craving something creamy and filling. Traditionally made with spaghetti and a creamy sauce, it’s baked with a good amount of cheese until bubbly and golden on top.
It’s simple, comforting, and feeds a crowd.
Ingredients for Cheesy Spaghetti Tetrazzini
You will need the following:
- Spaghetti – Spaghetti is the most traditional pasta shape for this dish but other long pastas, including linguine and fettuccine, also work well.
- Butter, Onion & Mushrooms – Sautéed together to add a savory, flavorful base to the sauce.
- Evaporated Milk & Cream-Style Soup – These combine to form a rich and creamy sauce.
- Cheese – Shredded cheddar and Colby Jack are melted into the sauce and sprinkled over the top. Mozzarella or Monterey Jack are both good in this dish, too.
- Seasoning Blends – Montreal Chicken Seasoning, which happens to be vegan, and celery salt give the casserole its classic flavor profile.
How to Make Easy Cheesy Tetrazzini:
STEP ONE: Prep. Preheat the oven to 350°F. Spray a 9×13-inch baking dish with non-stick cooking spray.
STEP TWO: Cook the Pasta. Cook spaghetti according to package directions. Rinse with cold water, drain, and return to the cooking pot.
STEP THREE: Make the Sauce. Into a large saucepan over medium-high heat, add the butter. When the butter is melted, add the onion and mushrooms. Cook, stirring frequently for 3 minutes, until softened. Add the evaporated milk, cream of mushroom soup, cheddar cheese, Montreal Chicken seasoning, celery salt, salt, and ground black pepper. Stir to combine. Adjust seasoning to taste.
STEP FOUR: Combine Pasta and Sauce. Pour the sauce over the spaghetti. Toss to distribute the sauce throughout evenly. The mixture will be very soupy. Transfer the pasta to the prepared 9×13-inch baking dish. Sprinkle Colby-Jack cheese over the top.
STEP FIVE: Bake and Serve. Bake, uncovered, for 40 minutes. Serve hot.
Make It Vegan 🌱
Swap in your favorite plant-based cheeses, butter, evaporated milk, and cream-style soup.
Vegan Evaporated Milk – Look for dairy-free evaporated milk on the baking aisle or in the vegan specialty section of your supermarket. If it’s not available in your area, try homemade Vegan Evaporated Milk. The recipe yields the equivalent of one 12-ounce can so it needs to be doubled for this recipe. It does also need a bit of simmer time so plan accordingly.
Vegan Cream-Style Soup – I use my own recipes for Vegan Cream of Mushroom and Vegan Cream of Chicken Substitute (Both work well for this dish; the cream of chicken is a little more economical.) They each yield the equivalent of one can of condensed soup so be sure to double to get the 20 ounces needed for this recipe.
