Peanut Butter Noodles ~

This quick and easy dinner is perfect for busy weeknights and is ready to serve in 30 minutes or less!
Asian Peanut Noodles Recipe
I like this peanut butter noodles recipe because it’s not only incredibly delicious and satisfying, but they are remarkably easy to make with mostly pantry staples.
These noodles are also highly customizable, allowing for various optional add-ins. Serve as a main dish with Crispy Tofu or Skillet Broccoli with Garlic.
Ingredients for Peanut Butter Noodles
You will need the following:
- 16 ounces linguine
- 1/4 cup peanut butter, creamy or chunky
- 1/4 cup tamari, or dark soy sauce
- 2 tablespoons rice vinegar
- 1/2 cup water
- 2 tablespoons vegetable oil
- 1 tablespoon dark sesame oil
- 2 tablespoons fresh ginger, minced
- 1 tablespoon + 1 teaspoon garlic, minced
- 1/4 cup scallions, also known as green onions, chopped
- 1/4 cup fresh cilantro, chopped
- red pepper flakes, optional for serving
Ingredient Notes
- Linguine – My favorite noodles for this recipe happen to be linguine but spaghetti noodles, udon noodles, soba noodles, and instant ramen noodles are all good choices.
- Peanut Butter – The simple peanut sauce can be made with smooth peanut butter, crunchy peanut butter, or natural peanut butter.
- Tamari – Regular soy sauce or low sodium soy sauce will also work.
How to Make Peanut Butter Noodles
STEP ONE: In a large pot of water, cook the linguine according to package directions, reserving 1 cup of the cooking water. Drain in a colander and set aside. Return the empty cooking pot to the stove.
STEP TWO: In a small bowl whisk together the peanut butter, tamari, rice vinegar, and water until smooth and set aside.
STEP THREE: Turn the heat under the pot to medium and add the vegetable oil and sesame oil. When the oil is hot, add the ginger and cook for 3 minutes, until softened and fragrant. Add the garlic and continue cooking for an additional 30 seconds.
STEP FOUR: Stir in the peanut butter sauce and cook for 1 minute, until heated through.
STEP FIVE: Add the cooked noodles and toss to coat. Add reserved cooking water, 1/4 cup at a time (if needed), to reach your desired level of creaminess.
STEP SIX: Divide noodles into pasta bowls, sprinkle with scallions, cilantro, and red pepper flakes, if using, then serve hot.
Optional Add-Ins
- Stir fry vegetables, such as snap peas, sliced diagonally into 1/2-inch pieces or julienned carrots
- Squeeze of fresh lime juice
- Drizzle of chili oil or chili sauce for a little kick
- Sprinkle white or black sesame seeds just before serving
