Perfect for day-after-Thanksgiving brunch or dinner!

I love the over-the-top abundance that is the Thanksgiving feast and that is why I always have, and always will, make more stuffing than we can possibly eat.

It’s like my dad used to say, “Better too much than not enough.”

Ingredients for Leftover Stuffing Frittata

  • Non-stick cooking spray
  • 3 cups prepared stuffing
  • 2 tablespoons vegan parmesan cheese, shredded
  • 18 ounces vegan liquid egg substitute, such as JUST Egg
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon ground nutmeg

Ingredient Notes:

  • For this recipe, I used sourdough-based Vegan Wild Rice Stuffing and JUST Egg brand liquid egg substitute.

How to Make Leftover Stuffing Frittata

STEP ONE: Preheat the oven to 375°F. Spray an 8-inch baking dish with non-stick cooking spray.

STEP TWO: Spread prepared stuffing in an even layer to cover the bottom of the baking dish. Sprinkle with parmesan cheese.

STEP THREE: In a small bowl, whisk together the liquid egg substitute, powdered mustard, and nutmeg. Carefully pour evenly over the stuffing.

STEP FOUR: Bake in the preheated oven for 30 minutes, or until set. Allow to stand at least 10 minutes before cutting and serving warm or at room temperature.

Storage

Leftovers should be stored in the refrigerator, covered, for up to 3 days.
