I like these Italian herb potatoes because they pair well with all sorts of main dishes.

Most recently, we enjoyed them as a side with Cauliflower Piccata. My Vegan Italian Sausage Burgers and Tofu and Broccoli Frittata also complement these potatoes nicely.

Ingredients for Italian Herb Roasted Potatoes

  • 1.5 pounds baby red potatoes, cut into 1-inch wedges
  • 1 tablespoon olive oil
  • 1 tablespoon parsley, finely chopped
  • 2 teaspoons garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt

Ingredient Substitutions and Variations

  • Potatoes: For this recipe, my personal preference is baby red potatoes simply because they’re cute and easy to slice into quarters for roasting. Russett potatoes, Yukon Gold, and full-size reds work just as well.
  • Italian seasoning: This recipe is adaptable to suit a variety of cuisines. Try swapping out the Italian spice blend for smoked paprika or another blend such as Old Bay, Greek, or Cajun seasoning!

How to Make Roasted Red Potatoes

STEP ONE: Preheat the oven to 400 degrees F. Line a baking sheet with foil or a silicone baking mat.

STEP TWO: Place cut potatoes into a large bowl; set aside.

STEP THREE: In a small bowl, whisk together the olive oil, garlic, Italian seasoning, and salt. Pour entire mixture over the potatoes, tossing to coat completely.

STEP FOUR: Onto the prepared baking sheet, spread the potatoes in a single layer. Bake for 20 minutes, or until fork tender, then serve hot.

Tips for Success

  • Spread out the potatoes. When spreading the potatoes on the baking sheet to roast, make sure the potatoes are in an even layer and not overlapping.
  • Serve it hot! To maximize the fresh-from-the-oven crispness, these potatoes are best served right away.
