Easy Vegan Stuffing Recipe

I love stuffing year-round and enjoy it just as much as a main course as a side dish. I mean, it’s bread for dinner. What’s not to love? #ieatcarbs

I like this recipe because it’s quick and easy to make with just a handful of simple ingredients. Stuffing is one also of those perfect side dishes for the Thanksgiving or Christmas table. It’s a family favorite, kind of like mashed potatoes; you really can’t go wrong with either.

Vegan Sausage Stuffing ~ Dress up store-bought stuffing mix with fresh veggies and plant-based sausage. Ready to serve in 30 minutes!

Ingredients for Vegan Sausage Stuffing

  • 1 tablespoon vegan butter
  • 1/2 pound plant-based sausage 
  • 1/2 cup celery, chopped
  • 1/4 cup yellow onion, chopped
  • 6-ounce package dry bread stuffing mix  
  • 1 1/2 cups water

​Ingredient Notes

  • Vegan Butter – Olive oil also works fine.
  • Plant-Based Sausage – I use 2 links of Beyond Sausage (Beyond Meat) brand of vegan sausage in Hot Italian flavor. 
  • Dry Bread Stuffing Mix – A blend of sourdough bread cubes with savory herbs such as sage or thyme pairs well with the flavors of Italian sausage. Field Roast makes a sage sausage.
  • Water – For adding a little extra flavor, try veggie broth or vegan chicken-style broth.

How to make Vegan Sausage Stuffing

STEP ONE: Preheat oven to 375 degrees F. Spray an 8×8-inch baking dish with non-stick cooking spray. 

STEP TWO: Set a large skillet over medium heat and add the butter. When butter is melted, crumble in the plant-based sausage, using a spatula to break up any large chunks.

STEP THREE: Add celery and onion. Cook, stirring frequently, for 5 minutes, until sausage is browned and vegetables are softened. 

STEP FOUR: Add stuffing mix and water. Gently stir to combine with the sausage mixture and ensure all the stuffing mix is damp. Remove from heat.

STEP FIVE: Pour the stuffing mixture into the prepared baking dish. Bake for 20 minutes, until the stuffing is golden brown. Serve hot.

Storage

  • This stuffing is just as good the next day! Leftovers should be brought to room temperature and then stored in an airtight container in the refrigerator.
