Vegan Sausage Stuffing Recipe
I like this chorizo stuffing recipe for Thanksgiving because it’s an unexpected twist on a classic holiday dish. It’s also very easy to make with a handful of simple ingredients. Serve as a side dish or as a main course with roasted vegetables.
I’ve even been known to make tacos out of leftovers. Oh yeah, carbs on carbs, baby! Pile chorizo stuffing onto a flour tortilla and top it with vegan cheddar cheese, pop in the microwave for a few seconds – so good!
Ingredients for Chorizo Stuffing
- 1/4 cup vegan butter
- 12 ounces vegan chorizo sausage links, casings removed
- 1 cup celery, chopped
- 1/2 cup yellow onion, chopped
- 2 cups vegan chicken-style broth
- 12 ounces dry bread stuffing mix
- 1/4 cup cilantro, chopped
Ingredient Notes
- Vegan Chorizo Sausage – Chorizo sausage is highly seasoned and has a unique flavor profile. Can you use another variety of sausage links? Technically yes, but if you want authentic Mexican flavor, chorizo is the way to go. I used Trader Joe’s brand vegan chorizo.
- Celery – Add bright flavor and a satisfying crunch.
- Yellow Onion – White onion also works just fine.
- Vegan Chicken-Style Broth – I use Better Than Bouillon’s No-Chicken Base to make my broth. Vegetable broth or water also works.
- Vegan Butter – For extra richness of flavor.
- Dry Bread Stuffing Mix – Check the label! Some brands have flavors that may sound vegan or vegetarian but actually contain chicken ingredients (looking at you, Stovetop). For this recipe, I used Pepperidge Farm’s Herb Seasoned Cube Stuffing. Cornbread stuffing mix would also be an excellent choice for this recipe.
- Cilantro – Cilantro can be omitted if it doesn’t suit your taste.
How to Make Chorizo Stuffing
STEP ONE: Preheat the oven to 350°F. Spray an 11×7-inch baking dish and set aside.
STEP TWO: Set a large, deep skillet over medium-high heat and add the butter. When the butter is melted, crumble in the sausage then add celery, and onion. Cook for about 5 minutes, stirring frequently until sausage is browned and vegetables are crisp-tender.
STEP THREE: Add the dry stuffing mix, cilantro, and chicken-style broth. Stir to thoroughly combine then transfer the mixture to the prepared baking dish.
STEP FOUR: Bake for 30 minutes, until the stuffing is lightly crisp on top. Serve hot.
