Homemade Onion Gravy Recipe

This vegan onion gravy recipe yields a savory gravy that works with various dishes – perfect for Thanksgiving or Christmas dinner!

This vegan onion gravy recipe is an absolute winner for your Thanksgiving or Christmas dinner! Its rich flavor is an excellent accompaniment to dishes such as Wild Rice Stuffing or Roasted Vegetable Wellington.

Ingredients for Caramelized Onion Gravy

​You will need the following: 

  • 1 tablespoon vegan butter
  • 1 cup Vidalia onion, quartered and thinly sliced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken-style broth
  • 1 teaspoon vegan Worcestershire sauce
  • 1/2 teaspoon fresh thyme, finely chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Ingredient Notes

  • Vegan Butter – Olive oil will also work for this recipe.
  • Vidalia Onion – The kind of onions used makes a difference here. Vidalias are sweet onions with a higher sugar content than regular yellow onions and this natural sweetness makes them ideal for caramelizing. They’re also less pungent in flavor than other yellow onions. Onion powder is not recommended for this recipe.
  • Chicken-Style Broth – I use Better Than Bouillon’s No-Chicken Base. Vegan beef broth can also be used but will result in more of a French onion soup flavor. 
  • Vegan Worcestershire Sauce – For adding depth of flavor. I use The Wizard’s brand.
  • Fresh Thyme ​- 1 teaspoon of dried thyme leaves can be used instead of fresh if needed.
  • Salt and Black Pepper​ – Amounts given are guidelines. Adjust according to personal preference or dietary restrictions. 

How to Make Caramelized Onion Gravy

STEP ONE: Set a medium saucepan over medium heat and add butter. When the butter is melted, add the sliced onions. 

STEP TWO: Saute for 20 minutes, stirring frequently, until onions are golden brown.

STEP THREE: Sprinkle flour over the caramelized onions. Stir to coat the onions in flour and continue cooking for 1 minute. 

STEP FOUR: Gradually add the chicken broth, Worcestershire sauce, thyme, salt, and black pepper. Bring just to a boil, then reduce the heat to a low simmer. Simmer for 10-15 minutes, giving it a good stir occasionally, until thickened. 

STEP FIVE: Adjust seasoning to taste and serve hot.

Storage

  • Leftover gravy should be cooled to room temperature and then stored in an airtight container in the refrigerator.
