A Simple, Traditional Favorite

I like this recipe because it stays close to the heart of classic haluski.

Purists will note that I’ve deviated from the traditional dish by omitting bacon. It’s fine.

Many traditional versions include bacon, but this one doesn’t. The cabbage and onion provide plenty of depth on their own. If you want to make the dish a little “meatier,” sliced vegan bratwurst works well. Toss cooked sausage into the pasta and cabbage before serving, and you’re all set.

Ingredients for Cabbage and Noodles (Haluski)

Here’s what you’ll need. Exact amounts are listed in the printable recipe card at the bottom of the post.

  • Medium-Wide Noodles – Egg noodles are traditional, but campanelle, farfalle, or rotini all work well.
  • Butter – For cooking the onion and cabbage.
  • Green Cabbage – Green cabbage retains its color as it cooks, giving the cleanest presentation.
  • Yellow Onion – Softens and sweetens as it cooks, adding depth to the cabbage.
  • Salt and Black Pepper – Season generously to bring everything into balance.
  • Red Pepper Flakes (optional) – A light sprinkle adds warmth without overpowering the dish.

How to Make Cabbage and Noodles (Haluski)

STEP ONE: Cook the Pasta. Cook pasta according to package directions. Drain in a colander and set aside.

STEP TWO: Cook the Cabbage and Onion. In a large, deep skillet, melt the butter over medium heat. Add the onion and cabbage. Cook, stirring frequently until lightly caramelized, about 8 minutes.

STEP THREE: Combine. Add the cooked pasta, tossing gently to distribute the cabbage throughout.

STEP FOUR: Season and Serve. Season generously with salt and pepper, add a sprinkle of red pepper flakes, if using, and serve hot.

Make it Vegan 🌱

For a plant-based dish, use vegan butter and egg-free pasta.
