Mushroom Rice Pilaf is earthy and aromatic, with jasmine rice, cremini mushrooms, scallions, and a light tamari-sesame flavor. It’s a great way to elevate a simple bowl of rice into a flavorful side dish you’ll want to make again and again.

Serve with Miso Grilled Tofu and Garlic Bok Choy.

Easy Mushroom Rice Pilaf

I like this recipe because it’s simple enough for a weeknight but feels a little more special than plain rice. The buttery mushrooms and onion give it a savory depth, and the tamari and sesame oil bring a subtle umami note that ties everything together.

It comes together in one pan, and the jasmine rice cooks up fluffy and flavorful every time. The scallions at the end add a little color and freshness that makes the dish feel complete.

Most recently, we enjoyed this savory rice with store-bought veggie potstickers and roasted broccoli. It was a simple and delicious dinner that was on the table in no time.

Ingredients for Mushroom Rice Pilaf

You will need the following:

  • Butter – For sautéing the mushrooms and onions.

  • Cremini Mushrooms – Earthy and hearty, chopped small so they mingle throughout the rice.

  • Yellow Onion and Minced Garlic – For a savory base.

  • Jasmine Rice – Fluffy, fragrant, and perfect for pilaf-style rice. Jasmine rice has a slightly nutty flavor, but any long-grain white rice will do. 

  • Chicken-Style Broth – Adds depth and flavor to the rice as it cooks. Vegetable broth can also be used, but may require additional seasoning.

  • Tamari – Brings a salty, umami flavor that complements the mushrooms.

  • Toasted Sesame Oil – A little goes a long way, adding a subtle nutty aroma.

  • Ground Black Pepper 

  • Scallions (Green Onions) – Thinly sliced, sprinkled on at the end for color and freshness.

Can I use brown rice?

Yes, but note that brown rice has a longer cooking time, usually around 35 minutes. Refer to the package instructions for the exact time.

How to Make Mushroom Rice Pilaf

STEP ONE: Sauté the mushrooms and onions.
In a large, deep skillet over medium-high heat, melt the butter. Add the chopped mushrooms and diced onion. Cook, stirring often, for about 2 minutes until softened and fragrant.

STEP TWO: Add garlic and rice.
Stir in the garlic and jasmine rice. Cook for another minute, letting the rice lightly toast and absorb the flavors.

STEP THREE: Add liquid and seasonings.
Pour in the chicken-style broth, tamari, sesame oil, and black pepper. Stir to combine.

STEP FOUR: Simmer.
Bring to a boil, then reduce heat to low. Cover and let simmer for about 20 minutes, until the liquid is absorbed and the rice is tender.

STEP FIVE: Fluff and garnish.
Remove from heat. Use a fork to gently fluff the rice. Sprinkle with sliced scallions and serve hot.

How to Make Mushroom Rice Pilaf

STEP ONE: Into a large deep skillet over medium-high heat, add vegan butter. When the butter is melted, add chopped mushrooms and onion. Cook, stirring frequently for 2 minutes, until softened and fragrant.

STEP TWO: Add garlic and rice then continue cooking an additional 1 minute.

STEP THREE: Stir in chicken-style broth, tamari, toasted sesame seed oil, and ground black pepper. Bring to a boil then reduce heat to low. Cover and simmer for 20 minutes, until liquid is absorbed and rice is tender.

STEP FOUR: Using a fork, gently fluff the rice. Garnish with sliced scallion and serve hot.

Make it Vegan 🌱

For a plant-based dish, use dairy-free butter and vegan chicken-style broth or vegetable broth.

Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator. Reheat in a skillet or microwave with a splash of broth or water to bring back the moisture.
