Vegan Apple Bread Recipe
Apple season is here, friends! It’s the time of year when the air is crisp, leaves are turning, and everyone seems to be going apple-picking. This year, though, I’m getting my family’s apples the old-fashioned way – buying them from the grocery store. Or, if I’m feeling particularly crunchy, maybe the farmers’ market.
The thing is, we’ve been apple-picking many times over the years, and it’s always been…fine. This year, however, I decided that maybe we don’t actually need the 30-40 pounds of overpriced apples we usually come home with from the local orchard. This apple bread only requires one apple, which is just my speed this year.
I like this quick bread recipe because it’s easy to make with simple ingredients and makes the kitchen smell amazing! Sidenote: If you’re looking for apple recipes that will make a larger dent in your apple-picking haul, try my Stovetop Applesauce or Slow Cooker Apple Cider.
Ingredients for Apple Bread
You will need the following:
- Flour-based cooking spray
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 teaspoon + 1/4 teaspoon ground nutmeg, divided
- 3/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon, or apple pie spice
- 1/8 teaspoon salt
- 3/4 cup unsweetened applesauce
- 1/2 cup + 2 teaspoons light brown sugar, divided
- 1/2 cup vegetable oil
- 1/4 cup maple syrup
- 1/4 teaspoon apple cider vinegar
- 3/4 cup Granny Smith apple, peeled and small diced
- 1 tablespoon turbinado sugar
How to Make Apple Bread
STEP ONE: Preheat the oven to 325°F. Spray an 8×4-inch loaf pan with flour-based cooking spray.
STEP TWO: In a large bowl, whisk together the all-purpose flour, whole wheat flour, 1 teaspoon nutmeg, baking soda, cinnamon, and salt. Set aside.
STEP THREE: In a medium bowl, whisk together the applesauce, 1/2 cup brown sugar, vegetable oil, maple syrup, and apple cider vinegar. Pour the applesauce mixture into the flour mixture and stir until well combined.
STEP FOUR: In one of the mixing bowls, toss the apple pieces with the remaining 2 teaspoons of brown sugar and the remaining 1/4 teaspoon of nutmeg. Stir into the batter.
STEP FIVE: Pour the batter into the prepared loaf pan and sprinkle the turbinado sugar evenly over the top of the bread.
STEP SIX: Bake for 1 hour, or until the top and edges are golden brown and a toothpick inserted into the center of the bread comes out clean.
STEP SEVEN: Cool completely in the baking pan on a wire rack. Cut into individual slices and serve at room temperature.
Quick Tip for Success
- For best results, use apples that are firm enough to retain their shape during the baking process. I used a Granny Smith apple for this recipe, but other apple varieties that work well include Gala, Fujii, and Honey Crisp.
Storage
- This apple cake should be covered with plastic wrap or aluminum foil and can be stored at room temperature for a day or two in the refrigerator for several days.
