Apple Streusel Coffee Cake ~
Tender and sweet apple cake topped with crumbly and buttery cinnamon streusel. Serve this autumn treat for breakfast, brunch, or dessert!
Apple season is here, and with our recent 25-pound haul from the apple orchard, it’s all apples all the time around here.
The first apple dish I make every autumn is Stovetop Applesauce. It’s an easy way to use a lot of apples at one time and fresh applesauce is just so much better than what’s available at the store. Plus I happen to find apple peeling to be almost meditative, especially when I challenge myself to peel the entire apple in one long strip. And yes, I think of the movie Sleepless in Seattle every time. #iykyk
Apple Coffee Cake Recipe
I like this cake because it’s packed with apple and cinnamon flavors of fall. And yes, it happens to pair exceptionally well with a hot cup of coffee or tea.
For the apples, look for a variety with a sweet-tart flavor profile, such as Honeycrisp or Braeburn. These have a strong apple flavor that won’t get lost in the other ingredients and can stand up well to baking without turning mushy.
Ingredients for Apple Streusel Cake
You will need:
For the Streusel Topping:
- 2 tablespoons vegan butter, softened
- 1 1/2 cups walnuts, finely chopped
- 1/3 cup granulated sugar
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
For the Cake:
- Flour-based non-stick cooking spray
- 2 cups all-purpose flour
- 2 teaspoons + 3/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegan butter, softened
- 1 cup vegan sour cream
- 2 tablespoons apple cider vinegar
- 1 1/2 teaspoons vanilla extract
- 2 cups Honeycrisp apples, peeled, cored, and diced
How to Make Apple Streusel Coffee Cake
STEP ONE: Preheat the oven to 350°F. Spray a 9×13-inch baking pan with flour-based non-stick spray.
STEP TWO: In a medium bowl, combine 2 tablespoons butter, walnuts, 1/3 cup granulated sugar, brown sugar, cinnamon, and salt. The mixture will be crumbly. Set aside.
STEP THREE: Whisk the flour baking soda and salt in a separate medium bowl and set aside.
STEP FOUR: In a large bowl, use a mixer to cream together the remaining 1 cup granulated sugar and 1/2 cup butter. Add the sour cream, apple cider vinegar, and vanilla extract, mixing to incorporate. Add the flour mixture and continue mixing just until combined; do not overmix. Gently stir in the apples. The batter will be thick.
STEP FIVE: Transfer the batter to the prepared baking pan, using a spatula to spread it evenly. Sprinkle the streusel mixture over the top to cover it completely.
STEP SIX: Bake 45 minutes, or until a toothpick inserted in the middle of the cake, comes out clean. Let the cake cool to room temperature then serve.
