Broccoli Cheddar Rice ~
This flavorful skillet rice dish with fresh broccoli and dairy-free cheddar cheese is perfect for busy weeknights and so much better than pre-packaged rice mixes!
I like this easy and cheesy one-pot stovetop recipe because it’s reminiscent of a traditional Broccoli and Rice Casserole but with fewer ingredients and no baking required.
It’s great as a side dish but you can also use this recipe as a base and bulk it up a bit for a heartier main dish. Try adding a can of drained and rinsed garbanzo beans or stirring in Crispy Baked Tofu just prior to serving and dinner is done!
Ingredients for Broccoli Cheddar Rice
- 2 tablespoons olive oil
- 1/4 cup yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1/2 teaspoon ground black pepper
- 2 cups vegan chicken-style broth
- 1/2 cup water
- 4 cups broccoli florets, cut into bite-size pieces
- 1 cup vegan cheddar cheese, shredded
How to Make Broccoli Cheddar Rice
STEP ONE: Into a large skillet over medium-high heat, add the olive oil, When oil is hot, add the onion. Cook for 2 minutes, stirring frequently, until onion is tender. Add garlic and continue cooking for an additional 30 seconds.
STEP TWO: Add the rice and black pepper. Stir to coat the rice with oil. Cook for 1 minute, stirring frequently, until rice is just lightly toasted.
STEP THREE: Pour in the chicken-style broth and water. Bring to a boil then cover and reduce heat to low. Simmer, without stirring, for 12 minutes.
STEP FOUR: Gently stir in the broccoli. Replace the cover and continue cooking for an additional 6 minutes, until the rice and broccoli are tender.
STEP FIVE: Stir in the cheese. Continue cooking for an additional 2 minutes, just until the cheese is melted then serve hot.
