Chipotle Mashed Sweet Potatoes ~
Make room on the holiday table for these spicy and sweet mashed potatoes!
Canned chipotle peppers in adobo sauce are the secret ingredient to adding a savory kick to this simple yet flavorful side dish.
This recipe is great year-round but I especially love it for the fall Thanksgiving season.
Bonus: These mashed potatoes are easy enough for the kids to make while you’re working on other components of the meal, such as Vegan Thanksgiving Wellington or Sourdough Stuffing Muffins with Apples and Fresh Herbs.
These Chipotle Sweet Potatoes can be prepped and served right away or assembled and heated for serving the next day.
Ingredients for Mashed Chipotle Sweet Potatoes
You will need:
- 3 pounds sweet potatoes
- 1 chipotle pepper in adobo sauce, minced
- 2 tablespoons vegan butter
- 1/2 teaspoon salt
- 2 teaspoons adobo sauce, or to taste
How to Make Mashed Chipotle Sweet Potatoes
STEP ONE: Place cubed sweet potatoes into a large pot. Fill with enough water to cover the potatoes by 1-inch. Bring to a boil and cook for about 20 minutes, until fork-tender. Drain the potatoes and return them to the pot.
STEP TWO: Off heat, add the butter, chipotle pepper, and salt. Using a potato masher or electric hand mixer on low speed, mash or blend to your desired consistency.
STEP THREE: 1 teaspoon at a time, stir in the adobo sauce, adjusting the amount to suit your heat preference. (For a milder chipotle-infused dish, this step can be omitted.)
STEP FOUR: Adjust seasoning to taste and serve hot.
FAQ
How spicy is this dish?
- Everyone’s heat tolerance varies but I would say medium. On a scale of 1-10, my 9-year old gave the heat level a 3. It’s just enough to strike a nice balance with the sweetness of the potatoes.
Can this be made in advance?
- Yes! These Chipotle Mashed Potatoes can be prepared a day in advance and stored, covered in the refrigerator. Prior to serving, transfer the potatoes to a baking dish then set them in a 350°F oven for about 20-25 minutes, until heated through.
Storage
- Leftovers should be stored, covered, in the refrigerator.
