I like this easy slow cooker recipe because it’s practically effortless to make with simple ingredients and can be made ahead as part of the many side dishes on the holiday menu and then kept warm in the slow cooker until ready to serve.
This easy recipe is also easy to customize – try contrasting the sweet corn with pepper jack cheese, adding a can of green chiles, and topping with green onions for a Tex-Mex spin. You can even make a double batch in the same slow cooker if needed to feed a larger crowd.
Ingredients for Slow Cooker Cheesy Corn
You will need the following:
- Nonstick cooking spray
- 3 (16-ounce) bags frozen corn, fresh corn can also be used
- 12 ounces vegan cream cheese, cubed
- 1 cup vegan cheddar cheese, shredded
- 4 tablespoons vegan butter, cubed
- 6 tablespoons vegan heavy cream, or mild-flavored plant milk such as oat milk
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
How to Make Slow Cooker Cheesy Corn
STEP ONE: Spray a 4-quart slow cooker with nonstick cooking spray, or use a slow cooker liner.
STEP TWO: In the slow cooker, combine all ingredients.
STEP THREE: Cover and cook on low for 3-4 hours, or until heated through and the cheese is melted, giving it a good stir once halfway through the cooking time. (Exact time may vary depending on individual equipment.)
STEP FOUR: Adjust seasoning to taste and serve hot.
Storage
- Leftovers of crock pot cheesy corn should be cooled completely, then stored in an airtight container in the refrigerator.
