Introducing one of my absolute favorite holiday snacks!

These roasted cashews are a little sweet, a little spicy, completely delicious, and perfect for holiday gifting!

Our Thanksgiving appetizer spread always includes an assortment of Mediterranean-style marinated olives, an assortment of vegan cheeses, and these yummy cashews.

Stuffed Mushroom Dip and Vegan Sausage and Cheddar Stuffing Balls are also among favorites that have earned their status as traditional holiday appetizers in our house.

Rosemary Cashews ~ These roasted cashews are a little sweet, a little spicy, completely delicious, and perfect for holiday gifting!

What you will need for these Rosemary Cashews:

  • 1 pound whole cashews, unsalted
  • 2 tablespoons fresh rosemary leaves, chopped
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoon light brown sugar
  • 2 teaspoon sea salt
  • 1 tablespoon vegan butter, melted

How to make Rosemary Cashews:

Preheat oven to 375 degrees F.
 
Into a small bowl, combine the rosemary, cayenne, brown sugar, and salt.  Set aside.
 
Spread cashews out on a baking sheet and bake for 10 minutes.
 
Place cashews in a medium-size bowl, pour melted butter over the top and stir to coat.
 
Sprinkle the seasoning mixture over the cashews and mix together.
 
Serve warm or room temperature.
