Oven Fries with Italian Seasoning and Parmesan are easy to make with simple ingredients. Serve with White Bean Burgers or Smoky Lentil Sloppy Joes.

A Family Favorite

I make these alongside burgers pretty regularly, and they disappear fast. My son took one bite the first time I served them and said, “Mom, these fries are awesome!” which is about the best endorsement a side dish can get.

Ingredients for Oven Fries with Italian Seasoning

Here’s what you’ll need. Exact amounts are in the recipe card below.

  • Russet Potatoes – Keep the skins on. They crisp up nicely in the oven and add texture.
  • Parmesan Cheese – Freshly grated clings to the potatoes better than pre-shredded and browns more evenly.
  • Garlic Powder – Use garlic powder, not garlic salt. There’s already kosher salt in the recipe.
  • Italian Seasoning – This is what makes these fries stand out. The dried herb blend works with the Parmesan to form a savory crust as the potatoes roast.
  • Olive Oil – Coats the potatoes and helps the seasoning stick.
  • Kosher Salt and Black Pepper – Simple seasonings that bring it all together.

How to Make Oven Fries with Italian Seasoning

STEP ONE: Prep. Preheat the oven to 425°F and line a large baking sheet with parchment paper.

STEP TWO: Season. Add the potatoes, olive oil, Parmesan, garlic powder, Italian seasoning, kosher salt, and black pepper to a large bowl. Toss until the potatoes are evenly coated.

STEP THREE: Bake. Spread the potatoes in a single layer on the prepared baking sheet. Bake for 25 minutes, until easily pierced with a fork.

Make it Vegan: Substitute your favorite vegan Parmesan.

Frequently Asked Questions

What potatoes are best for oven fries?

Russet potatoes. Their high starch content gives you the combination of crispy exterior and soft interior that works best for oven fries. Waxy potatoes, like red potatoes, hold too much moisture and won’t get the same result.

Do I need to soak the potatoes before baking?

No, not for this recipe. The Parmesan and seasoning coating does the work here, and soaking would make it harder for everything to stick to the potatoes.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator. Reheat in a 400°F oven on a parchment-lined baking sheet until warmed through. A microwave will work in a pinch, but the potatoes will soften.
