Lemon Herb Rice Recipe
I like this recipe because using fresh herbs straight from the garden (or produce department!) is a delicious way to elevate plain white rice in a manner that won’t overpower your main dish. While the ingredient list is simple, this dish is anything but boring.
This savory herb rice is light and earthy. It’s a lovely side dish that can also be enjoyed as a component of a main. Think rice bowls with Barbeque Tempeh or Baked Pesto Tofu – so good!
Ingredients for Herbed Rice
- 1 tablespoon vegan butter
- 1/4 cup scallions, thinly sliced
- 2 cups long-grain white rice
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 cups water
- 1/4 cup curly parsley, chopped
- 1/2 teaspoon lemon zest
Ingredient Notes
- Butter: Olive oil can also be used.
- Scallions: Also known as green onions. Chives work just as well.
- White Rice: If you’re out of long-grain white rice, basmati or jasmine are also good choices for this recipe.
- Salt and Pepper: The amounts listed in the recipe are guidelines. Adjust accordingly to suit your seasoning preference.
- Curly Parsley: Fresh parsley adds light, fresh flavor and a pretty pop of spring color.
- Lemon Zest: For just the lightest touch of citrus.
How to Make Herbed Rice
STEP ONE: In a medium saucepan over medium heat, melt the butter. Add the scallions and saute for 1 minute.
STEP TWO: Add the rice, salt, and pepper, stirring frequently for 1 minute to coat the rice with butter.
STEP THREE: Add water then increase the heat and bring to a boil. Reduce the heat back down to a simmer, cover, and cook for 18 minutes, until liquid is absorbed and rice is al dente. Remove from heat and fluff with a fork.
STEP FOUR: Stir in parsley and lemon zest. Adjust seasoning to taste and serve warm.
