Cucumber and Basil Salad ~
Simple ingredients and minimal prep work make this fresh and easy side dish a summertime winner!
The cool crispness of this light and bright salad is perfect for pairing with all your favorite foods of the season!
It’s also very easy to double or triple the ingredient amounts to suit your needs.
Serve Cucumber and Basil Salad with grilled veggie burgers, spicy kabobs, or sloppy joe sandwiches.
The type of cucumber makes a difference!
For this recipe, I used one large English cucumber. I particularly like this style of cucumber for salads.
The benefit of selecting English cucumbers over regular cucumbers is that they are practically seedless. They also provide just the right level of moisture without resulting in a soggy salad.
If you choose to use regular cucumbers, also known as slicing cucumbers, just be sure to peel the skin if it seems tough and scoop out the seeds. Depending on the size of the cukes, you may need two of the regular type vs. just one English variety.
Ingredients for Basil Cucumber Salad
You will need:
- 1 large English cucumber, quartered
- 3 tablespoons fresh basil, cut into thin strips
- 1 tablespoon lemon juice
- 2 teaspoons olive oil
- salt, to taste
- ground black pepper, to taste
How to Make Basil Cucumber Salad
STEP ONE: Spread cucumber slices onto a tea towel and pat dry. Set aside.
STEP TWO: In a medium mixing bowl, stir together the basil, lemon juice, and olive oil.
STEP THREE: Add the cucumbers and toss to coat.
STEP FOUR: Season to taste with salt and pepper.
STEP FIVE: Cover and refrigerate for 2 hours, or until chilled. Serve cold.
