Easy Vegan Taco Recipe
I like this recipe because the tacos are simple yet satisfying, flavorful, and ready to serve in about 15 minutes. These are also the easiest tacos ever. Only four ingredients, plus water, are needed and they’re all pantry staples that you most likely already have on hand.
Chickpeas, also known as garbanzo beans, are an excellent choice as a vegan taco meat because, when they’re smashed, the texture is actually similar to that of ground beef. Then, when you add in the taco seasoning, you’ve got a taco filling with all the old school flavor we know and love and none of the fatty grease.
How to Serve Chickpea Tacos
Chckpea tacos are delicious on crunchy shells or soft tortillas. Personally, I prefer the contrast of the crispy shells. For toppings, traditional toppings such as lettuce, salsa, vegan cheese, and guacamole pair well with taco-seasoned chickpeas.
Ingredients for Chickpea Tacos
- 2 (15-ounce) cans chickpeas, rinsed and drained
- 2 teaspoons olive oil
- 3/4 cup water
- 2 tablespoons + 1 teaspoon taco seasoning
- 12 corn taco shells
How to Make Chickpea Tacos
- Using a food processor or potato masher, puree or mash chickpeas to desired consistency. Set aside.
- In a large skillet, heat oil over medium-high heat. Add the smashed chickpeas, water, and taco seasoning, stirring to distribute the seasoninig evenly.
- Cook, stirring frequently, for 5 minutes, until heated through. Spoon into taco shells, add your favorite toppings, and serve hot.
