What to Serve With Cheesy Gnocchi

This dish is pretty decadent on its own.

If you’re inclined to add a side dish, I recommend going with something much lighter, such as a simple green salad or fresh fruit to round out the meal.

Ingredients, Tips, & Substitutions

  • gnocchi – Check the label to make sure it’s dairy-free! Some store-bought gnocchi contains eggs.
  • vegan butter
  • garlic
  • all-purpose flour
  • oat milk – Another mild-flavored plant milk, such as unsweetened almond milk can also be used for this recipe.
  • vegan cheddar cheese – Try experimenting with different cheeses like mozzarella, smoked gouda, or pepper jack.
  • salt
  • ground black pepper
  • vegan sour cream

Optional Add-Ons

Pretty much any topping you would add onto a baked potato will work with this gnocchi. These are some of my personal favorites:

  • more vegan cheddar cheese
  • scallions
  • red onion
  • vegan bacon

How to Make Cheesy Gnocchi

Cook the gnocchi. Cook the gnocchi according to package directions. Drain and set aside.

Make a roux. Into a medium-size saucepan over medium heat, add the butter. When the butter is melted, add the garlic and cook for about 30 seconds, stirring frequently. Whisk in the flour. The mixture will be thick.

Add liquid to create a sauce. Gradually add the oat milk, whisking continuously for 2 minutes, until the sauce thickens.

Make it cheesy. Whisk in the cheddar cheese, salt, and ground black pepper. Cook for 3 minutes, stirring frequently until the cheese is melted.

Stir in sour cream. Remove from the heat and stir in the sour cream.

Combine the cooked gnocchi and cheese sauce. Off heat, return the gnocchi to its cooking pot. Pour the cheese sauce over the cooked gnocchi, stirring gently to coat. Serve hot.
