Baked Broccoli Bites Recipe

I like this recipe because it’s versatile and great for using extra broccoli. The bites can be served hot from the oven or at room temperature, making them suitable for game days, picnics, and lunch boxes. We’ve also been known to snack on broccoli bites cold; they keep well for days in an airtight container in the fridge.

Ingredients for Baked Broccoli Cheese Balls

You will need:

  • 2 cups broccoli florets, finely chopped
  • 3/4 cups vegan cheddar cheese, grated
  • 1 cup Panko breadcrumbs
  • 2 tablespoons red onion, finely chopped
  • 1 teaspoon garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Ingredient Notes

  • Broccoli Florets: Fresh or frozen broccoli can be used for this recipe. If using frozen, just make sure to thaw it completely and squeeze out any excess moisture.
  • Vegan Cheddar Cheese: I used Violife brand; it gets soft and melty without oozing everywhere and making a mess. Vegan mozzarella would also be a good choice.
  • Panko Breadcrumbs: Panko breadcrumbs are flakier than “regular” breadcrumbs and give the best texture for these broccoli balls.

How to Make Baked Broccoli Cheese Balls

STEP ONE: Preheat the oven to 350°F. Line a baking sheet with parchment paper.

STEP TWO: In a medium bowl, combine the broccoli, cheese, breadcrumbs, red onion, garlic, salt, and ground black pepper. Adjust seasoning to taste. Using your hands, shape heaping tablespoons of the broccoli mixture into 1-inch balls; you will have about 16. Set the balls onto the prepared baking sheet.

STEP THREE: Bake for 25 minutes, until slightly crisp and golden. Serve warm or at room temperature.
