Cabbage and Peas Recipe

Crisp-tender cabbage and sweet peas combine for a satisfying texture and flavor. I like this recipe because it’s an easy and flavorful way to round out a meal and add a pretty pop of color to the dinner plate.

This versatile and budget-friendly combination with its simple skillet style pairs especially well with Irish and American cuisines. Most recently, I served this dish as a side with Potato Cakes for our St. Patrick’s Day dinner. It’s also a nice complement to Mini Meatloaves and Mashed Potato Casserole.

Ingredients for Cabbage and Peas

You will need:

  • 2 tablespoons vegan butter
  • 2 cups green peas, frozen
  • 1/4 cup Vidalia onion, chopped
  • 6 cups green cabbage, cored and chopped
  • 2 tablespoons vegan chicken-style broth
  • Salt, to taste
  • ground black pepper, to taste
  • 2 tablespoons scallions, chopped

How to Make Cabbage and Peas

STEP ONE: Place frozen peas into a medium bowl then fill the bowl with cold water to cover the peas. Allow peas to soak for 20 minutes, until thawed. Drain and set aside.

STEP TWO: Into a deep skillet over medium heat, add the butter. When the butter is melted, add onions and cook for 2 minutes, stirring frequently until softened.

STEP THREE: Stir in the cabbage, peas, and chicken-style broth. Reduce the heat to low and simmer, stirring occasionally for 5 minutes, until the cabbage is crisp-tender. Adjust seasoning to taste with salt and ground black pepper.

STEP FOUR: Sprinkle with scallions and serve hot.

Notes

Soaking the peas in water for a short period of time before cooking can help to remove any remaining ice crystals and start the thawing process, which can help to ensure even cooking and prevent them from becoming mushy or overcooked.
