Ingredients

  • 2 tablespoons vegan butter
  • 2 cups green peas frozen
  • 1/4 cup Vidalia onion chopped
  • 6 cups green cabbage cored and chopped
  • 2 tablespoons vegan chicken-style broth
  • Salt to taste
  • ground black pepper to taste
  • 2 tablespoons scallions chopped

Instructions

  • Place frozen peas into a medium bowl then fill the bowl with cold water to cover the peas. Allow peas to soak for 20 minutes, until thawed. Drain and set aside.
  • Into a deep skillet over medium heat, add the butter. When the butter is melted, add onions and cook for 2 minutes, stirring frequently until softened.
  • Stir in the cabbage, peas, and chicken-style broth. Reduce the heat to low and simmer, stirring occasionally for 5 minutes, until the cabbage is crisp-tender. Adjust seasoning to taste with salt and ground black pepper.
  • Sprinkle with scallions and serve hot.

Notes

Soaking the peas in water for a short period of time before cooking can help to remove any remaining ice crystals and start the thawing process, which can help to ensure even cooking and prevent them from becoming mushy or overcooked.
