Vegan Meatball Recipe

I like this recipe because they have the flavor and texture of traditional meatballs, and the combination of fresh herbs, especially sage and thyme, smells and tastes like Thanksgiving.

I’m already looking forward to making a double batch and serving these vegan meatballs to the whole family, including the meat eaters, as part of this year’s holiday meal. For festive-flavored ground beef meatballs, try my Vegan Cocktail Meatballs with cranberry sauce!

Vegan Turkey Meatballs Ingredients

You will need the following: 

  • 12 ounces plant-based ground turkey
  • 1/4 cup Panko breadcrumbs
  • 2 tablespoons yellow onion, finely chopped
  • 2 tablespoons celery, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh sage, finely chopped
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Ingredient Notes

  • Plant-Based Ground Turkey – I use Trader Joe’s brand.
  • Panko Breadcrumbs  – Regular breadcrumbs are not recommended for this recipe.
  • Fresh Herbs – 1/3 teaspoon each of dried thyme or sage can be used instead of fresh, if needed.

How to Make Vegan Turkey Meatballs

STEP ONE: Preheat the oven to 400°F. Line a sheet pan with parchment paper.

STEP TWO: In a large bowl, combine all the meatball ingredients – ground turkey, bread crumbs, onion, celery, parsley, thyme, sage, salt, and black pepper – either by hand or with a food processor. 

STEP THREE: Shape the meatball mixture into 16 equally portioned meatballs. Place meatballs onto the lined baking sheet, spacing them out so that they are not touching.

STEP FOUR: Bake for 20 minutes, until the bottoms are golden brown and a meat thermometer shows an internal temperature of 165°F. Serve hot.

Storage

  • These meat-free turkey meatballs can be stored in an airtight container in the refrigerator. They also freeze well – perfect for meal prep!
