Easy Tortellini Recipe

I like this recipe because it is perfect for busy weeknights when you don’t feel much like cooking but still need to get an easy and satisfying dinner on the table!

This dinner came about after we had just returned from being out of town for several days. You know the scene. The fridge is practically emply and no one wants to go grocery shopping yet. I was in full post-travel mode where all I wanted to do was relax and recharge from our trip. Oh, the irony.

We had been living on restaurant food and frankly, I was tired of it and ready to eat at home. A quick search of our overstuffed freezer revealed two packages of frozen tortellini and a bag of green beans I couldn’t remember why I had purchased. I don’t normally have frozen vegetables, other than peas, on hand so who knows? Anyway, this seemed like a good time to make use of them.

I love an easy pasta dinner and this one came together in a snap. And because we love our carbs around here, garlic bread, also from the freezer, rounded out the meal nicely. The family was happy and fed in no time and I didn’t have to go to the grocery store. Win-win.

Ingredients for Tortellini and Green Beans

  • 18 ounces vegan tortellini
  • 2 tablespoons vegan butter
  • 4 cloves garlic, minced
  • 16 ounces French-style frozen green beans, thawed and drained
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Ingredient Notes

  • Vegan Tortellini: My current favorite dairy-free tortelliini is made by Kitehill. It comes in 9 ounce packages so you’ll need two, and is usually located in the vegan frozen foods section. Ravioli would also work well with this recipe.
  • Vegan Butter: Olive oil will also work in a pinch.
  • Garlic: Using pre-minced garlic is an easy way to save on prep time.
  • Frozen Green Beans: Personally, I prefer the texture of French-style green beans for this recipe but regular green beans are fine. If you use fresh green beans, just make sure to pre-cook them prior to adding to the pan.
  • Salt and Pepper: As always, season to taste.

Optional Add-Ins

  • More Veggies! Fresh tomatoes, sauteed bell peppers, peas, pre-cooked and chopped asparagus – all good choices!
  • Vegan sausage: Pre-cooked Italian sausage is a flavorful and “meaty” way to bulk up this dish.
  • Parmesan Cheese: Sprinkle a little dairy-free cheesiness over the top just prior to serving.
  • Red Pepper Flakes: Adds a touch of heat for those that like a spicier kick.

How to Make Tortellini and Green Beans

STEP ONE: Cook the tortellini according to package directions. Drain and rinse with cold water; set aside.

STEP TWO: In a large deep skillet over medium-high heat, melt the butter. Add garlic and saute for 30 seconds.

STEP THREE: Add green beans. Season with salt and pepper then toss gently to coat.

STEP FOUR: Stir in the tortellini and cook for 2 minutes, stirring frequently until heated through. Adjust seasoning to taste.

STEP FIVE: Transfer to serving bowls and serve hot.
