I like this monster cookie bar recipe because, not only is a total crowd-pleaser, but it’s made with basic pantry ingredients that are pretty much always on hand around here.

Ingredients for Monster Cookie Bars

You will need:

  • 6 tablespoons vegan butter, softened
  • 6 tablespoons granulated sugar
  • 1/4 cup brown sugar, packed
  • 3/4 cup creamy peanut butter
  • 6 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups quick cooking oats
  • 3/4 cup vegan m&m-style candies, divided
  • 1 cup vegan semi-sweet chocolate chips
  • 3 tablespoons vegan heavy cream

Ingredient Notes

  • For the m&m-style candies, I used Unreal brand. They taste just like m&ms and I like colors, especially for Halloween. There are other brands on the market but I haven’t tried them out yet so not sure how they compare.
  • Trader Joe’s and Nestle both make vegan chocolate chips and are my go-to brands.
  • Look for vegan heavy cream in the refrigerated vegan or dairy section of the supermarket. If its not readily available, making your own is very simple and takes just a few minutes with this recipe –> Vegan Heavy Cream Substitute

How to Make Vegan Monster Cookie Bars

STEP ONE: Line an 8×8-inch baking dish with parchment paper. Set aside.

STEP TWO: Into a large mixing bowl, add the butter, granulated sugar, and brown sugar. Use a hand mixer on medium speed to cream together the butter and sugars together.

STEP THREE: Add the peanut butter and continue mixing until fully incorporated and consistency is smooth.

STEP FOUR: Add the all-purpose flour, vanilla extract, salt, and oats. Mix just until combined.

STEP FIVE: Stir in 1/2 cup of chocolate candies.

STEP SIX: Press the cookie dough mixture into the prepared baking dish. Set aside.

STEP SEVEN: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Use the microwave to heat the chocolate in 20-second intervals, stirring after each interval until the chocolate is melted and its consistency is smooth.

STEP EIGHT: Pour the melted chocolate over the top of the cookie dough mixture, using a spatula to spread the chocolate so that it covers the entire surface.

STEP NINE: Sprinkle with the remaining 1/4 cup of chocolate candies.

STEP TEN: Cover and refrigerate until set, at least 2 hours, then cut into squares and serve.
