Easy Pepper Salad Recipe

I like this recipe for its fresh flavors and how quickly it comes together. You don’t even have to turn on the stove for this one. The only “cooking” required is the prep and that’s a snap. There is a fair amount of chopping involved but it doesn’t take much time; 5-10 minutes, tops.

Ingredients for Italian Bell Pepper Salad

You will need:

  • 1 cup green bell pepper, chopped
  • 1 cup red bell pepper, chopped
  • 1 cup yellow bell pepper, chopped
  • 1 cup cucumber, seeded and chopped
  • 1 cup whole black olives, drained
  • 1 tablespoon Italian dressing
  • 1/2 cup vegan feta cheese, crumbled
  • 1 tablespoon parsley, chopped

Ingredient Notes

  • Bell Peppers. Using a variety of peppers adds colorful interest to this salad. Using all green peppers will produce a slightly bitter salad. Adding sweeter red, yellow, or orange peppers to the mix balances the flavor nicely.
  • Cucumber. English cucumbers do not need to be de-seeded and are an excellent choice for this recipe. If using a regular cucumber, an easy way to remove the seeds is simply slicing the cucumber in half and running a spoon down the center to remove the pulp.
  • Black Olives. For a touch of briny deliciousness.
  • Italian Dressing. Some Italian dressings contain dairy so check the label to make sure your dressing is vegan if that is a concern.
  • Vegan Feta Cheese. Look this on the vegan aisle. I’ve seen it in crumbled and block form.
  • Parsley. Curly or Italian flat-leaf parsley both work equally well for this recipe.

How to Make Italian Bell Pepper Salad

STEP ONE: In a large bowl, combine the bell peppers, cucumber, and black olives. Add the Italian dressing and toss to coat.

STEP TWO: Sprinkle with feta cheese and parsley. Toss gently to distribute throughout the salad and serve.

Storage

  • This salad is best served the same day. Any leftovers should be covered and stored in the refrigerator.
