Vegan Cherry Crumble Recipe

I like this recipe because it effortlessly captures the essence of cherry season and the rich taste of a cherry pie without the need for rolling out dough or worrying about achieving the perfect crust. This dessert is a delightful crowd-pleaser that brings maximum enjoyment with minimal effort.

Ingredients for Fresh Cherry Crumble

You will need the following:

  • Non-stick cooking spray
  • 4 cups fresh cherries, pitted and halved
  • 3/4 cup water
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup quick-cooking oats
  • 1/4 cup pecans, finely chopped
  • 1/4 cup vegan butter, cut into small cubes

How to Make Fresh Cherry Crumble

STEP ONE: Preheat the oven to 375°F. Spray an 8×8-inch baking dish with non-stick cooking spray.

STEP TWO: In a medium pot over medium-high heat, stir together the cherries, water, sugar, and cornstarch. Bring to a simmer then reduce the heat to low. Continue cooking for 10 minutes, stirring frequently, until the mixture thickens. Transfer to the prepared baking dish and set aside.

STEP THREE: In a medium bowl, combine the flour, brown sugar, cinnamon, oats, and pecans. Add the cubed butter to the bowl. Using your fingers or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs. The mixture should have a crumbly texture with pea-sized lumps of butter throughout. Sprinkle the topping over the cherry mixture.

STEP FOUR: Bake, uncovered for 25 minutes, then lightly cover with foil to prevent excess browning and continue baking for an additional 15 minutes. (Total baking time = 40 minutes.)

STEP FIVE: Cool until the filling stops bubbling and serve warm.
