Cauliflower Steak Recipe

I like this recipe because it’s easy to make and a versatile dish that pairs well with a variety of side dishes. A simple green salad, roasted vegetables, or grains are all good choices to round out the meal.

To make this delicious dish, start by slicing a head of cauliflower into thick “steaks.” Brush them with a bit of olive oil, season with salt and pepper, and roast them in the oven until they turn beautifully golden brown. Spread a layer of dairy-free Boursin over the cauliflower then top with Parmesan cheese and breadcrumbs and pop it back in the oven until lightly crisp and golden.

When the cauliflower steak au gratin is ready, bring it out of the oven and allow it to cool slightly before serving. The result is a harmonious blend of flavors and textures: the cauliflower steaks remain tender, the creamy Boursin layer provides richness, and the crispy crust adds a satisfying crunch.

Ingredients for Cauliflower Steak Au Gratin

  • 1 medium head cauliflower, trimmed and cut into 4 (3/4″-thick) slices
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 ounces dairy-free Boursin cheese
  • 1/2 cup dairy-free Parmesan cheese, shredded
  • 1 tablespoon Panko breadcrumbs
  • 1 tablespoon Italian flat-leaf parsley, chopped
  • Crushed red pepper, optional for serving

How to Make Cauliflower Steak Au Gratin

STEP ONE: Preheat the oven to 425°F.

STEP TWO: On a roasting sheet pan, arrange the cauliflower in a single layer. Brush both sides with olive oil and season both sides with salt and pepper.

STEP THREE: Roast for 10 minutes, just until fork-tender. Remove from the oven, leaving the cauliflower on the sheet pan. Spread with Boursin then top with Parmesan cheese and sprinkle with breadcrumbs.

STEP FOUR: Roast for an additional 10 minutes, until lightly golden. Sprinkle with parsley and serve with optional crushed red pepper on the side.
