Broccoli Rice ~
Sauteed fresh broccoli with long grain white rice is easy to make and on the table in 30 minutes or less! Serve as a side dish or toss in some Crispy Baked Tofu to make it the main course!
Broccoli and Rice Recipe
I like this broccol rice recipe because it’s simple, healthy, and pairs well with a variety of cuisines. And since I tend to overbuy on vegetables in general, this is a great way to use that extra head of broccoli I always seem to have on hand.
Ingredients for Broccoli Rice
You will need:
- 1 tablespoon olive oil
- 1/2 cup long grain white rice, uncooked
- 2 teaspoons garlic, minced
- 4 cups broccoli florets, finely chopped
- 2 cups water
- 1/2 teaspoon seasoned salt
Ingredient Notes
- Long Grain White Rice – In the interest of simplicity, I like white rice for this recipe. If you prefer another variety of rice, just be sure to adjust the cooking time according to package directions.
- Garlic. Fresh is best but 2/3 teaspoon garlic powder can be used in a pinch.
- Broccoli – I prefer fresh broccoli for this recipe. If you opt for frozen, thaw it completely and squeeze out as much excess moisture as possible before adding it to the pan.
- Water – Vegan chicken-style chicken broth can be substituted for the water. If you prefer to use broth, taste before adding the seasoned salt; it may not be necessary due to the sodium already present in the broth.
- Seasoned Salt – This is an all-purpose blend of savory seasonings and not the same as regular salt.
How to Make Broccoli Rice
STEP ONE: Add olive oil to a large saucepan over medium heat. When the oil is hot, add the rice and cook for 1 minute, stirring to coat. Add the garlic and continue cooking for an additional 1 minute.
STEP TWO: Add the broccoli, water, and seasoned salt. Stir just gently enough to combine. Bring to a boil then reduce the heat to low.
STEP THREE: Cover and simmer for 20 minutes or until the rice is tender. Fluff with a fork, adjust seasoning to taste, and serve hot.
