Easy Shortbread Cookie Recipe

I like this shortbread cookie recipe because they’re quick and easy to make with only 4 simple ingredients. The flavor is mild; not too sweet, and pairs perfectly with a hot cup of coffee or tea.

This recipe yields 2 1/2 dozen ball cookies and can be easily halved, doubled, tripled… whatever suits your baking needs.

Ingredients for Sugared Shortbread Cookies

You will need:

  • 1 cup vegan butter, softened
  • 2/3 cup + 1/4 cup granulated sugar, divided
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour

Ingredient Notes

  • Vegan Butter – I use Earth Balance For best results, use butter that is softened to room temperature. Do not use melted butter! Melted butter is more liquid than softened and will cause the cookies to spread too much.
  • Vanilla Extract – Almond or maple extract also work well for imparting subtle flavors into these cookies.

How to Make Sugared Shortbread Cookies

STEP ONE: Preheat the oven to 350°F.

STEP TWO: Add the butter, 2/3 cup sugar, and maple extract to a medium mixing bowl. Using a hand mixer, beat on medium speed for 1 minute, until combined.

STEP THREE: Add the flour and continue beating for an additional 2 minutes, until combined. The dough will be crumbly.

STEP FOUR: Shape the dough into 1-inch balls. Roll each ball in the remaining 1/4 cup sugar and place at least 2 inches apart on a cookie sheet.

STEP FIVE: Bake for 15 minutes, or until the edges are lightly browned. Let stand on the cookie sheet to set for 2 minutes then remove to a cooling rack. Cool completely and serve.
