Ingredients for Scallion Rice:

  • 2 teaspoons olive oil
  • 1 cup long-grain white rice
  • 2 cups vegan chicken-style broth
  • 1/2 teaspoon sea salt
  • 1/4 cup scallions – also known as green onions
  • zest of 1 lemon
Green Onion Rice ~ A light and mild-flavored white rice dish made with fresh green onions and lemon zest. Ready to serve in about 20 minutes.

How to Make Scallion Rice:

STEP ONE: Into a medium-size saucepan over medium heat, add olive oil. When the oil is hot, add the rice. Stir frequently for 1 minute. 

STEP TWO: Add chicken-style broth and sea salt. Bring to a boil then reduce heat to low.

STEP THREE: Cover and simmer for 17 minutes, until rice is cooked and liquid is absorbed.

STEP FOUR: Fluff rice with a fork then gently stir in scallions and lemon zest then serve hot.
