Vegan Black Bean Burger Recipe

These plant-based homemade burgers are a delicious twist on the classic burger, perfect for game day gatherings or a satisfying weeknight dinner. Combining hearty black beans with a blend of seasoned breadcrumbs, fresh cilantro, and a hint of Southwest taco seasoning, these mini burgers pack a punch of flavor in every bite. 

Making the sliders begins with mashing the black beans just enough to keep some texture, then mixing in finely chopped yellow onion, cilantro, garlic, and a reserved bit of bean liquid to help bind everything together. Once the seasoned breadcrumbs and taco seasoning join the mix, you’ll form the mixture into eight evenly sized patties. The burgers are pan-cooked until they’re lightly browned on each side and ready for your favorite toppings.

Ingredients for Black Bean Sliders

You will need the following:

  • 1 (15-ounce) cans of black beans, rinsed and drained, reserve 2 tablespoons liquid from the can 
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup cilantro, destemmed and finely copped
  • 2 tablespoons yellow onion, finely chopped
  • 1 tablespoon taco seasoning
  • 2 teaspoons garlic, minced
  • 2 tablespoons olive oil
  • 8 slider buns, lightly toasted

Ingredient Notes

  • Black Beans: The star of the show! Canned black beans work best here since a bit of the liquid will be used to help bind the mixture together.
  • Seasoned Breadcrumbs: For best results, use regular seasoned breadcrumbs. Panko bread crumbs are not recommended because they absorb less moisture which can lead to drier burgers.
  • Cilantro: Fresh cilantro adds a burst of brightness—simply remove the stems and chop finely.
  • Yellow Onion: Finely chopped yellow onion contributes a gentle sweetness and crunch. You can swap in red or green onions if you prefer a different flavor.
  • Taco Seasoning: This zesty blend usually includes chili powder, cumin, paprika, onion powder, and a pinch of salt and pepper, offering a delightful Southwestern kick that pairs perfectly with the beans.
  • Garlic: Freshly minced garlic brings a wonderful flavor boost. If you need a substitute, use 1 teaspoon of garlic powder in place of the 2 teaspoons of minced garlic.
  • Olive Oil: A drizzle of olive oil helps achieve a lightly crisp exterior without weighing down the patties.
  • Slider Buns: If the grocery store is out of hamburger buns, sliced dinner rolls are a good substitute.

How to Make Black Bean Sliders

STEP ONE: Prepare the Beans. Add the black beans to a food processor and pulse until they’re partially mashed, leaving some whole beans for texture. Alternatively, mash them in a medium bowl using a fork or potato masher.

STEP TWO: Mix the Ingredients. In the bowl with the beans, add the seasoned breadcrumbs, cilantro, yellow onion, the reserved 2 tablespoons of bean liquid, taco seasoning, and garlic. Mix thoroughly until all ingredients are well combined.

STEP THREE: Form the Patties. Divide the mixture into eight equal portions. Roll each portion into a ball and gently press it into a patty.

STEP FOUR: Cook the Patties. Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the patties in the skillet and cook for about 3 minutes until lightly browned. Carefully flip each patty and cook for an additional 3 minutes until the other side is browned and the patties are heated through.

STEP FIVE: Assemble and Serve. Place each patty on a lightly toasted slider bun and add your favorite toppings.
