Ingredients

  • 1 15-ounce cans black beans, rinsed and drained, reserve 2 tablespoons liquid from the can
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup cilantro destemmed and finely copped
  • 2 tablespoons yellow onion finely chopped
  • 1 tablespoon taco seasoning
  • 2 teaspoons garlic minced
  • 2 tablespoons olive oil
  • 8 slider buns lightly toasted

Instructions

  • Add the black beans to a food processor and pulse until they’re partially mashed, leaving some whole beans for texture. Alternatively, mash them in a medium bowl using a fork or potato masher.
  • In the bowl with the beans, add the seasoned breadcrumbs, cilantro, yellow onion, the reserved 2 tablespoons of bean liquid, taco seasoning, and garlic. Mix thoroughly until all ingredients are well combined.
  • Divide the mixture into eight equal portions. Roll each portion into a ball and gently press it into a patty.
  • Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the patties in the skillet and cook for about 3 minutes until lightly browned. Carefully flip each patty and cook for an additional 3 minutes until the other side is browned and the patties are heated through.
  • Place each patty on a lightly toasted slider bun and add your favorite toppings.
