Chickpea Veggie Burger Recipe
I love burgers and the fact that there are a million ways to enjoy them. Some days I like a meaty burger like my Vegan Juicy Lucy (seriously, so good!), and other times I like a bean burger like these made with chickpeas that have more of a garden-style that I find especially well suited to al fresco dinners in the summertime.
If you’re a meal prepper, this healthy veggie burger is a good one to put in rotation. The recipe is easy to adapt to however many burgers you want to make and they freeze beautifully.
Chickpea Burgers vs. Garbanzo Burgers
In order to avoid confusion, it’s important to note that chickpeas and garbanzo beans are one and the same. The difference only is which name you prefer to use. ‘Garbanzo’ is a Spanish name while ‘Chickpea’ is the more commonly used English name for the same bean. So there you go.
If you are purchasing ingredients for this recipe in the U.S., canned garbanzo beans are what you will find in the supermarket. U.K. readers will find the same product jarred and labeled as chickpeas.
My personal theory on why more people don’t refer to chickpea veggie burgers as ‘garbanzo burgers’ is less about geography and simply that ‘chickpea’ is more fun to say. Although, I suppose it could be argued the other way around as well.
Ingredients for Chickpea Burgers
You will need:
- 1 15-ounce can chickpeas, also known as garbanzo beans, rinsed and drained
- 3/4 cup cilantro leaves
- 1/3 cup seasoned Panko breadcrumbs
- 1/4 cup red onion, chopped
- 1 vegan egg replacer, equivalent to 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons olive oil
Veggie Burger Toppings
When it comes to building a great burger, there are so many possibilities and what works best depends largely on the type of patty. For garden-style burgers like these, here are a few suggestions:
- Fresh Veggies: Lettuce, tomatoes, red onions, cucumbers, radishes, and sprouts
- Vegan Ranch Dip
- Vegan Tzatziki Sauce
- Homemade Guacamole
- Vegan Cheese: Mozzarella, provolone, or feta
How to Make Chickpea Burgers
STEP ONE: Into a food processor with a blade attachment, add the chickpeas, cilantro, breadcrumbs, red onion, egg replacer, salt, and pepper. Pulse until combined but still somewhat chunky in texture.
STEP TWO: Divide the mixture into 4 equal portions. Roll each portion into a ball then flatten with the palm of your hand to form four 4-inch patties.
STEP THREE: Set a large skillet over medium heat and add olive oil. When the oil is hot, add the patties and cook for about 4 minutes. Turn and cook for an additional 4 minutes. The exact cooking time for each side may vary slightly but what you are looking for is that the patties are golden and lightly crisp.
STEP FOUR: Serve on toasted burger buns with your favorite toppings.

Hi Gillian ~ Either works. These burgers can be frozen before or after cooking, so it’s really a matter of personal preference. Just be sure to layer parchment paper or wax paper between the patties so they don’t stick together as they freeze. Hope this is helpful!
