Crispy tater tots smothered in shredded cheddar cheese and topped with scallions. Serve with Vegan Sloppy Joes or all by themselves as a late-night snack indulgence!

Sheet Pan Recipe
I like this 5-ingredient recipe because it is so ridiculously easy. In fact, I hesitated to even post this recipe because it is almost too easy. Truly, the simplicity is such that I’m not even sure this qualifies as an actual recipe at all. I mean, you could have zero cooking skills whatsoever and manage to pull off this dish. Maybe that’s what makes these cheesy tots so irresistible. The ingredients are pretty basic, too.
Ever since I started using frozen tater tots for my Cowboy Casserole, I pretty much always have a bag stashed in the freezer. They’re just good to have on hand, especially if you have kids in the house who enjoy feeding the entire neighborhood.
Ingredients for Cheesy Tater Tots
You will need:
- 28-ounce bag of frozen tater tots
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups vegan cheddar cheese
- 1/4 cup scallions, chopped
Ingredient Notes and Substitutions
- Tater Tots: Look for the extra crispy variety of frozen tots. For this recipe, I like Ore-Ida’s Extra Crispy. They hold up well and don’t get mushy under all that cheese.
- Cheese: I love cheddar cheese on potatoes but if that doesn’t suit your taste, try swapping the cheddar for another variety of cheese. Dairy-free mozzarella, Gouda, and blue cheeses would all work well.
- Seasonings: As always, season to taste. For a kicked-up version of this recipe, try swapping the salt and pepper for Old Bay seasoning.
- Scallions: Also known as green onions, scallions pair especially well with cheddar cheese. Maybe leave them off or swap them for another topping if you’re going with a different type of cheese. I think parsley and mozzarella would also be a nice flavor combination.
How to Make Cheesy Tater Tots
STEP ONE: Line a baking sheet with foil. On the baking sheet, spread the tater tots in an even layer. Bake according to package directions then remove from the oven. Switch the oven’s setting to Broil.
STEP TWO: Sprinkle the hot tater tots with salt, pepper, and cheese.
STEP THREE: Return the tots to the oven. Broil for 3 minutes, or until the cheese is melted.
STEP FOUR: Remove from the oven, sprinkle with scallions, and serve hot.
