Bok choy is one of those vegetables that I have not fully appreciated until recently. The beauty of this underrated vegetable is that it is surprisingly flavorful and easy to cook.
I like this recipe because it checks all the boxes:
- Easy to make with simple ingredients
- Flavorful without overpowering the rest of the meal
- Healthy – Bok choy is packed with good-for-you vitamins
- Budget-friendly – I bought a 1-pound bag for less than $4 and that was double what was even needed for this recipe.
Ingredients for Garlic Bok Choy
You will need:
- 2 tablespoons soy sauce
- 2 teaspoons garlic, minced
- 1 teaspoon sesame oil
- 1/8 teaspoon ground black pepper
- 1 teaspoon vegetable oil
- 4 heads baby bok choy, halved
How to Make Garlic Bok Choy
STEP ONE: In a small bowl, whisk together the soy sauce, garlic, sesame oil, and pepper. Set aside.
STEP TWO: Into a large skillet over medium-high heat, add the vegetable oil using a spatula to spread it around the pan. When the oil is hot, add the soy sauce mixture. Place the bok choy in the pan so they do not overlap then gently turn to coat.
STEP THREE: Cover and cook for 1 minute. Uncover and turn the bok choy. Replace cover and continue cooking for an additional 1 minute or until leaves are wilted and the stalks are tender but still have a slight crunch. Serve hot.
Quick Tip for Success
- Remember that the leaves of bok choy can be delicate so they do need to be handled with care. Not a big deal; just don’t get rough with them during cleaning or moving them around the pan.

This garlic bok choy was so yummy! I loved the tender bok choy with nice undertones of garlic. I served it with some fried tofu and white rice. So good!
