Ingredients for Scallion Rice:
- 2 teaspoons olive oil
- 1 cup long-grain white rice
- 2 cups vegan chicken-style broth
- 1/2 teaspoon sea salt
- 1/4 cup scallions – also known as green onions
- zest of 1 lemon
How to Make Scallion Rice:
STEP ONE: Into a medium-size saucepan over medium heat, add olive oil. When the oil is hot, add the rice. Stir frequently for 1 minute.
STEP TWO: Add chicken-style broth and sea salt. Bring to a boil then reduce heat to low.
STEP THREE: Cover and simmer for 17 minutes, until rice is cooked and liquid is absorbed.
STEP FOUR: Fluff rice with a fork then gently stir in scallions and lemon zest then serve hot.
