Ingredients

  • 2 teaspoons olive oil
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1/2 teaspoon kosher salt
  • 1/4 cup scallions white and green parts, thinly sliced
  • 1 teaspoon lemon zest

Instructions

  • Warm the olive oil in a medium saucepan over medium heat. When the oil is hot, add the rice and stir frequently for 1 minute.
  • Pour in the vegetable broth and kosher salt and bring to a boil, then reduce the heat to low.
  • Cover and cook for 17 minutes, until the rice is cooked through and the liquid is fully absorbed. Let the rice stand, covered, for 10 minutes.
  • Fluff the rice with a fork, gently stir in the scallions and lemon zest, and serve hot.
