This cake is easy to make with simple ingredients and completely dairy-free!
I like this recipe because it tastes like the holidays. I love Snickerdoodle Cookies, especially around Christmas and now that the weather has turned cool here, I’m ready for all the spices of the season.
This snickerdoodle cake is light and airy with a very slight vanilla taste and topped with a blend of sugar and cinnamon that goes on right as the cake comes out of the oven, slightly caramelizing from the heat.

Snickerdoodle Cake Ingredients
You will need:
- Flour-based non-stick cooking spray
- 5 tablespoons vegetable oil
- 2 teaspoons vanilla extract
- 1 teaspoon apple cider vinegar
- 1 cup water
- 1 1/2 cups all-purpose flour
- 1/2 cup + 1 tablespoon granulated sugar, divided
- 1/2 cup light brown sugar
- 3 1/2 teaspoons ground cinnamon, divided
- 1 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
How to Make Snickerdoodle Cake
STEP ONE: Preheat the oven to 350°F. Spray an 8×8-inch baking dish with flour-based non-stick cooking spray. In a small bowl, combine 1 tablespoon granulated sugar and 1 teaspoon cinnamon, and set aside.
STEP TWO: n a large bowl, whisk together the vegetable oil, vanilla extract, apple cider vinegar, and water. Set aside.
STEP THREE: In a medium bowl, whisk together the flour, remaining 1/2 cup granulated sugar, brown sugar, remaining 2 1/2 teaspoons cinnamon, baking soda, cream of tartar, and salt.
STEP FOUR: Add the flour mixture to the oil mixture, whisking just until smooth. Pour into the prepared baking pan. Bake for 35 minutes, until a toothpick inserted in the center, comes out clean.
STEP FIVE: While the cake is still hot, sprinkle the cinnamon/sugar mixture evenly over the top. Cool completely then slice and serve.
