Ingredients

  • Flour-based non-stick cooking spray
  • 5 tablespoons vegetable oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 cup water
  • 1 1/2 cups all-purpose flour
  • 1/2 cup + 1 tablespoon granulated sugar divided
  • 1/2 cup light brown sugar
  • 3 1/2 teaspoons ground cinnamon divided
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350°F. Spray an 8x8-inch baking dish with flour-based non-stick cooking spray. In a small bowl, combine 1 tablespoon granulated sugar and 1 teaspoon cinnamon, set aside.
  • In a large bowl, whisk together the vegetable oil, vanilla extract, apple cider vinegar, and water. Set aside.
  • In a medium bowl, whisk together the flour, remaining 1/2 cup granulated sugar, brown sugar, remaining 2 1/2 teaspoons cinnamon, baking soda, cream of tartar, and salt.
  • Add flour mixture to the oil mixture, whisking just until smooth. Pour into the prepared baking pan. Bake for 35 minutes, until a toothpick inserted in the center comes out clean.
