Cabbage Steaks Recipe

I like this recipe because baked cabbage steaks are similar to cauliflower steaks in that they work well as a low carb and healthy main dish or a hearty side dish. Fresh cabbage is also budget-friendly and widely available year-round.

Ingredients for Roasted Cabbage Steaks

You will need the following:

  • 1 3-pound head of green cabbage
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Italian flat-leaf parsley

Optional Add-Ons

This simple recipe is easy to customize. Try adding one or more of these ingredients t achieve your perfect flavor combination:

  • A sprinkle of red pepper flakes for a touch of heat (stir into the olive oil mixture or add at the table)
  • A light squeeze of lemon juice just before serving 
  • Shredded Parmesan cheese (sprinkle over the cabbage steaks during the last 10 minutes of roasting)
  • Fresh herbs – I like parsley as a finishing touch for this recipe but fresh oregano or thyme leaves will also pair well.

Will this recipe work for red cabbage steaks?

  • Yes, red or purple cabbage will work fine. Red cabbage has a slightly pepperier flavor than green cabbage so plan your seasonings accordingly.

How to Make Crispy Roasted Cabbage Steaks

STEP ONE: Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper or aluminum foil.

STEP TWO: Set the cabbage upright on a cutting board then, using a sharp knife, slice the cabbage from the top down into 1-inch thick rounds. Arrange the cabbage in a single layer on the prepared baking sheet.

STEP THREE: In a small bowl, whisk together the olive oil, garlic powder, oregano, salt, and black pepper. Use a silicone brush to brush the oil mixture over the cabbage.

STEP FOUR: Roast for 30 minutes, or until the outer leaves are charred and the centers of the cabbage steaks are fork-tender. The cooking time may vary slightly depending on your preference for a crispy or more tender cabbage steak. Adjust seasoning to taste, sprinkle with fresh parsley, and serve hot.
